How To Make Seafood Okra

What you need:

Okro (about N300 worth, roughly chopped)

1 kilo of shrimps (cleaned and seasoned with salt and white pepper)

500 grams dried crayfish

500 grams dry fish

Seasoning cube

1 kilo crab claws (or crabs if you like)

500g jumbo prawns (marinated with dry pepper, fish seasoning and a hint of garlic)

Chunks of white fish (red snapper or catfish). This should be well seasoned to your preference. I used garlic, seasoning cubes and white pepper.

Salt to taste

For the pepper sauce you need the following:

600 grams chillies (I used Ata Rodo)

Roughly chopped onions

Garlic

Seasoning cubes

4 tablespoons of palm oil

Salt to taste

Directions:

– Bring a pot to boil and add your crayfish to the boiling water along with the dried fish and a table spoon of your roughly chopped ata rodo.

Add the okra and leave to simmer slightly till the okro looks like it almost ready. Stir the soup around and taste for seasoning but hold back because the seasoned seafood may change the taste for better when its added.

– Add the crab claws (It is important that you crack the crab claws slightly so that the flavours can really penetrate the crustacean). Leave it for about 7 minutes then add the white fish and prawns.  In another 7 mins add the shrimp to cook a little for 2 more minutes and you’re done.

Pepper Sauce

– In a blender, pulse the pepper (ata rodo) with some onions into a rough chop like for ofada sauce.

– In sauce pan heat up the palm oil till its smoking hot but not bleached and pour all the pepper and onions in, allowing it to simmer in a medium low heat till the pepper is cooked.

– Add salt and the seasoning cubes to taste. The pepper sauce is a garnish and a side sauce so you can add as much heat as you like to your own plate of food!

Introducing complementary foods to your baby can be easy if you try out different food options. One of which is nuts- peanuts ( groundnut), cashew nuts, walnut and others.

This does not help to prevent allergies in the future rather when these foods are introduced early since it reduces the chances of children from becoming allergic to them later in life.

In spite of loads of benefits found in giving your baby different types of nuts, parents need to take caution on the following.

  • Do not give a child less than five a whole nut to eat and giving peanut butter in a spoon to a baby. This could cause a choking hazard.
  • If you are introducing nuts to your child’s meals ensure that it is ground or crushed into smaller piece.
  • If you have a family history of allergies such as Eczema and other food allergies, you need to see the doctor before giving nuts to your baby as a weaning food.

Here are simple ways to infuse your child’s meal with peanut

  • Mix a teaspoon or two of ground peanut into a plate with your baby’s cereal, yoghurt. Ensure that it is not too thick; stir it well before giving it to your baby.
  • You can also use spread peanut, cashew nut butter on bread to serve as a finger food. Toddlers would enjoy this better. Though your baby may not be able to bite off, she can suck on it and lick up the nutritious butter too.

Peanut butter is great for vegetarians and vegan babies. You can either make your peanut butter or get a store bought one. In getting a store-bought peanut butter, look out for the ones that do not contain added salt or sugar.
